Coconut Mango Rice Pudding

Ingredients
- 1 cup rice
- 3 cups coconut milk
- 1/3 cup sugar
- Pinch salt
- 1 cup diced mango
Directions
- Rinse rice quickly.
- Simmer rice with coconut milk, sugar, and salt.
- Stir often, especially in the last 10 minutes, to prevent sticking.
- Cook until creamy, 25–30 minutes.
- Cool slightly; fold in mango.
- Serve warm or chilled.
