West African Peanut Stew with Vegetables

Ingredients
- 1 tbsp oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 1 sweet potato, cubed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1/2 cup peanut butter
- 3 cups chopped greens (kale/spinach)
- 1 tsp salt
Directions
- Sauté the onion in oil for 4 minutes.
- Add garlic and ginger for 30 seconds.
- Add sweet potato, tomatoes, and broth; simmer 20 minutes.
- Whisk peanut butter with a ladle of hot broth until smooth.
- Stir the peanut mixture into the pot; simmer for 5 minutes to thicken.
- Add the greens; cook for 3–5 minutes, until tender.
- Taste and adjust salt.
