Celebration Rice Pilaf with Toasted Nuts

Ingredients
- 2 tbsp butter
- 1 cup rice
- 2 cups broth
- 1/3 cup toasted almonds
- 1/3 cup dried cranberries (optional)
- Salt/pepper
Directions
- Melt butter in a pot over medium heat.
- Add rice; stir 2 minutes to toast.
- Pour in broth; bring to a simmer.
- Cover and cook 18 minutes on low.
- Turn off the heat; rest for 5 minutes, covered.
- Fluff with fork; fold in nuts + cranberries.
- Taste and adjust salt.
