Creamy Tuscan Chicken with Garlic Spinach

Ingredients
- 1 1/2 lb chicken breast cutlets
- 1 tbsp oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes
- 2 cups spinach
- 1/2 tsp salt, 1/2 tsp pepper
Directions
- Pat chicken dry. Season with salt and pepper.
- Heat oil in a skillet over medium-high heat.
- Sear chicken 4–5 minutes per side until golden. Remove to a plate.
- Lower the heat to medium. Melt the butter, then add the garlic and cook for 30 seconds.
- Pour in broth and scrape up browned bits (flavor).
- Add cream and sun-dried tomatoes. Simmer 5 minutes to thicken slightly.
- Stir in spinach until wilted.
- Return chicken + juices to pan. Simmer 3–5 minutes until cooked through.
- Taste and adjust salt/pepper. Serve.
